GREMOLATA

Gremolata Gremolata is an Italian mixture of finely chopped parsley, garlic and grated lemon zest, used to flavour various dishes.

It can be sprinkled on top of stews (eg "osso buco") or mixed in pasta sauces.

Also orange zest and other herbs, like sage or rosemary, are sometimes used in gremolata mixes.
