BEURRE MANIÉ

Beurre manié Similar to uncooked roux, beurre manié (kneaded butter) is a mixture of equal amounts of softened butter and flour, kneaded together into a thick paste.

The mixture is used to thicken sauces and stews. It is whisked into boiling liquid in small knobs.
