PALMIER

Palmier shape Palmiers are crispy and delicate leaf-shaped cookies made of puff pastry and sugar.

The pastry is rolled out, sprinkled with sugar and folded several times. Two sides of the pastry are rolled inwards to meet at the centre. This "double roll" is then cut into thin slices that are baked in oven until crisp and caramelized.

In Finland these cookies are called kanapee, a word that in other languages is used for canapé, an open-faced sandwich.
