TOMATO SAUCES

Tomato sauce Basic tomato sauces  —  sauces tomate:

  • Tomato sauce  —  sauce tomate
    Tomato sauce can be made with fresh or canned tomatoes cooked with meat or vegetable stock, vegetables (onion, carrot, garlic, herbs) and/or bacon and ham. Tomato sauce is used to accompany various meat, vegetable and pasta dishes.
  • Tomato coulis  —  coulis de tomate
    Tomato coulis is a sauce made of fresh tomatoes, carrots, onions, herbs, sugar, salt and pepper. The sauce is cooked until thickened into a puree and sieved. Tomato coulis may be served as a sauce or it can be used to flavour soups and sauces.
