FISH ROE SAUCE
Cold sauce
100 ml crème fraîche
100 ml rainbow trout or salmon roe
3 tbsp chopped dill
3 tbsp chopped chives
white pepper
(salt)
Mix the chopped herbs with crème fraîche and gently mix in the roe. Season with pepper and salt, if the roe is not very salty.
Serve with fried or grilled fish.
To make a thicker sauce, you may also whip the crème fraîche until fluffy before adding the other ingredients.
