Lemon juice vinaigrette LEMON JUICE VINAIGRETTE

This is a Finnish version of the classic "French dressing", with added sugar  —  something which the French would never use.

75 ml light-tasting oil (olive, turnip rape, sunflower seed, corn, etc)
50 ml freshly squeezed lemon juice
1 - 1½ tsp sugar
¼ tsp salt
¼ tsp white pepper



Lemon juice vinaigrette with lettuce Measure the ingredients into a small jar or bottle with a tight-fitting lid.

Place the lid on and shake the bottle or jar until a smooth emulsion is formed.

Serve the dressing drizzled on or mixed with green salad with tomatoes, cucumber, onion, radishes, etc.

Store the dressing sealed in refrigerator, where it will keep for a few days.
