WAFFLE RECIPES

Waffle with ice cream and jam Note that the cooking times and number of waffles produced stated in the below recipes may vary depending on the type of waffle iron used.

DELICACY WAFFLES

3 eggs
100 g sugar
150 g butter
150 g potato flour
grated zest of 1 lemon

Rub the butter until soft. Beat the eggs and sugar until pale and fluffy. Mix in the softened butter whisking thoroughly. Add the lemon zest and the flour. Place 2 tablespoons of the batter on a hot waffle iron and cook until golden brown and crisp, about 1 minute per waffle. To maintain their crispness, place the waffles on a wire rack before serving.
Makes about 5 waffles.

PARTY WAFFLES

150 ml water
300 ml flour
2 eggs
3 tbsp melted butter
300 ml cream

Beat together the water and the flour, add the eggs, the melted butter and the whipped cream. Cook the waffles on hot waffle iron until golden brown and crisp, about 2½ minutes per waffle. To maintain their crispness, place the waffles on a wire rack before serving.
Makes 8 - 9 waffles.

CRISP WAFFLES

20 g fresh yeast
pinch of sugar
little over 300 ml flour
400 ml milk
150 g butter

Melt the butter and let it cool. Rub the yeast into a paste with the sugar, beat in the milk, the flour and the melted butter. Cover and let rise for about 1 hour. Cook the waffles on a hot waffle iron until golden brown and crisp, about 2 minutes per waffle. To maintain their crispness, place the waffles on a wire rack before serving.
Makes 8 waffles.

1960s waffle iron EGG WAFFLES

2 eggs
250 ml milk
250 ml flour
1 tsp baking powder
2 tbsp butter

Melt the butter and let it cool. Sift together the flour and the baking powder. Beat together the egg yolks and the milk, add the flour and the melted butter. Beat the egg whites until stiff and carefully fold into the batter. Cook the waffles on a hot waffle iron until golden brown and crisp, about 1½ to 4 minutes per waffle. To maintain their crispness, place the waffles on a wire rack before serving.
Makes about 6 - 8 waffles.

Serving suggestion:
Serve the waffles hot, topped with butter and sugar, cinnamon, maple syrup, molasses, jam, fresh fruit or berries, ice cream, whipped cream or crème fraîche, etc, or with some savoury toppings.
