SUGARED BACON
Sugared bacon slices 250 g thin slices of fresh, smoked streaky bacon
200 ml soft brown sugar (firmly packed)

Spread the sugar in a thickish layer on a flat plate. Press the bacon slices into sugar on both sides. Place the slices on a wire rack set over an oven pan.

Bake at 175 °C until golden brown, turning the slices once during baking. Bake for about 8 minutes per side, depending on the thickness of the bacon slices.

Let the bacon slices cool on a wire rack. Serve lukewarm with freshly baked hot pancakes, drizzled with maple syrup.
