BAVARIAN CREAM

A cold dessert  —  a.k.a. bavarois  —  that is basically crème anglaise mixed with beaten egg whites, whipped cream and gelatine and flavoured with chocolate, liqueur, pureed fruits, etc.

The mixture is poured in a mould and chilled until set and then unmoulded. Good Bavarian cream should be velvety light and ethereal in texture.
