PISTOU

1. A Provençal sauce or paste made with basil, garlic and olive oil crushed together. Tomato and Parmesan cheese may also be added to the sauce. Pistou is usually served mixed with soupe au pistou, see below.

2. A Provençal soup  —  soupe au pistou  —  that includes beans, vegetables and vermicelli and is seasoned with pistou sauce.
