SISKONMAKKARA

Siskon sausage Mild, smooth-textured siskonmakkara is a type of Finnish fresh sausage made with pork, salt and other spices.

The name of the sausage is derived from the old Swedish word susiskon, which in turn comes from the German Saucischen and the French saucisse, meaning "small sausage".

To cook the siskonmakkara sausage, the soft sausage meat is usually squeezed out from the casing in small dollops (see the picture). The sausage meat may then be cooked, fried or simmered in stock until cooked through. A popular Finnish soup dish made with "siskon" sausages is siskonmakkarakeitto.

Siskonmakkara is very perishable and should preferably be cooked on the day of purchase.
