QUEEN'S JAM
Scandinavian raspberry and bilberry jam
The wonderful combination of raspberries and Nordic wild bilberries is very popular in the Scandinavian countries, also here in Finland.
about 550 ml raspberries fresh or frozen
about 450 ml bilberries fresh or frozen
500 g jam sugar
Only use ripe and whole fresh berries and pick out any bad ones. If you are using frozen berries, let them become partly thawed.
Layer the berries and the sugar in a thick-bottomed, wide and large saucepan. Bring the mixture slowly to the boil and simmer, uncovered, for two minutes (or follow the instructions on the jam sugar package).
For the berries to remain as whole as possible, do not stir the mixture, but only gently shake the pan during cooking.
Take the pan off the heat. With a slotted spoon, carefully skim off any foam that may have formed on the surface. Let the jam set for 10 minutes before pouring it into hot jars sterilized with boiling water. Close the jars with sterilized lids and let cool. Store the jam jars in refrigerator.
Serve the queen's jam with ice cream, crêpes, croissants, waffles, as a filling in cakes or jelly rolls, etc.
