POTATO SALAD
Potato salad served with frankfurters is a casual party dish favourite in Finland.
300 g cooked, cold potatoes
80 g pickled gherkins
½ apple
1 small red onion
2 tsp capers
200 - 250 g crème fraîche or sour cream
1 tbsp sweet Swedish-type mustard
½ tbsp lemon juice
½ tbsp tarragon vinegar, honey-apple wine vinegar or white wine vinegar
1 tbsp mayonnaise
salt
sugar
white pepper
(garlic powder)
balsamic vinegar
Cut the onion in thin slices and cut the slices in half. Place the slices into a dash of balsamic vinegar to marinate, while you prepare the rest of the ingredients.
Mix the crème fraîche, mustard, lemon juice, vinegar and mayonnaise. Season with salt, sugar and
pepper, and garlic powder, if you like.
Dice the potatoes, gherkins and apple, drain the onion slices and caperberries and combine the ingredients. Pour over the sauce, mix gently, cover and place in
refrigerator for at least 1 hour before serving.
Serve the salad on the side with meat or fish dishes, barbecued sausages, etc. In Finland, potato salad is often paired with wiener sausages, a combination especially popular as a part of an informal meal or snack served during New Year's Eve or May Day festivities.
