HASSELBACK POTATOES
medium-sized potatoes
clarified butter
salt
pepper
grated cheese or (fresh) breadcrumbs
Choose potatoes of regularly oval shape. Peel the potatoes.
Slice the potatoes thinly, but leave the slices joined at the base (see the pictures below).

Place the sliced potatoes in a buttered oven pan, brush liberally with clarified butter and
season with a dash of salt and pepper. Bake at 220 - 225 °C for 30 minutes.
Take the potatoes out, brush with butter again, sprinkle each with some grated cheese or breadcrumbs
and continue baking for 15 - 20 minutes more, or until the potatoes are golden brown and tender. Serve the potatoes with roasted meat dishes.
